I had some sad looking bananas on my kitchen counter, so this morning I decided to make Baked Blueberry Banana Oatmeal – one the few breakfast/ brunch recipes I make that doesn’t include some sort of breakfast meat #everythingisbetterwithbacon
Made with old fashion rolled oats, skim milk, fresh bananas, Maine blueberries and maple syrup – it’s healthy and quick to pull together. I pinned the original recipe from So, How’s It Taste. The original version called for walnuts, which none of us really like in oatmeal,so we skipped that step. This would be a great breakfast to make on Sunday and have for the week, but you will have to at least double or triple it, to get enough leftovers.
Full Disclosure: I used pancake syrup instead of real maple syrup. This makes this recipe not as clean as it could be. But quite frankly, real maple syrup is super expensive and I’m saving my bottle of Maine Maple Syrup for something more exciting than oatmeal.
